Gray Hat SEO is not something between Black Hat and White Hat, but rather "the practice of tactics/techniques which remain ill-defined by published material coming out of Google, and for which reasonable people could disagree on how the tactics support or contrast with the spirit of Google’s published guidelines.

its tactic that are now allowed, that would be very hard to tell if your using those tactics.

(Using fake accounts and alternative computers and networks to make new sites on different ips in order to get backlinks to a main money site)... hard to detect, but not allowed.

paying for links in ways that would never be detected could be consider black hat... or it may just be spamming your link in a way that does not look like spam.

Using black hat SEO tricks along with white hat SEO tricks is called gray hat SEO. If you use only black hat SEO, your website could be banned by Google. So you can use the mix of white hat and black hat SEO tricks. But you need to keep in mind that gray hat SEO is not really great, you need to conscious when you use them. White hat SEO is very legitimate and google always appreciate them.

Gray hat SEO is not as simple to define but gray hat SEO is the process of using both white hat and black hat SEO techniques. And the fact is Gray Hat SEO is riskier than White Hat SEO. Few gray hat SEO techniques are:
Cloaking.
Purchasing old domains.
Duplicate content.
Link buying.

Grey hat SEO= white hat SEO(ethical)+black hat SEO(non-ethical). It is also a technique to get the website rank on SERP. But the Gray Hat SEO is bit risky then White Hat SEO. It may or may not result in your website being banned.
