Organic SEO is a technique used to get more people to your website using various techniques. It is a good way to make your website popular. And when you will pay for any company for doing SEO for your website then it comes under paid SEO. I will never prefer paid SEO for my website.

in summary
SEO ( organic traffic ) - mainly comes from search engines. For example when you are looking for something and put keywords to Google you will find search results. Wneh you click on those results it's organic traffic/
PPC - you pay for keywords. For example you want to promote green smoothies keywords because you cannot rank it in google fast ( or at all for some reason ). Then you can buy traffic for that keyword to your website
