Both are different kind of redirection which are used to redirect site/webpages.
301 is permanent redirection. When you have changes your domain or rewrite any url with new name than you should use 301 redirect to redirect your all old domain/webpages to new domain/webpages. 302 is temporary redirection. It is not advisable to do that. Google always recommend to do 301 redirect on your site..
