The crust less bread is ground coarsely into large flakes to give those fried foods a smooth and crisp coating. There are countless number of recipes using panko bread crumbs. These flakes do not absorb oil or grease and therefore can stay crispier for a long time. People love the light, crunchy coating that only panko can offer.
